Rúibín

Rúibín’s world-class cocktails are a perfect example of how Galway’s student energy and creative spirit have enriched its food and drink culture. Dublin-born Dennis O’Neill came to Galway for university, but it was while working in the city’s pubs and nightclubs that he discovered his love for hospitality.

Now the general manager, Dennis still writes the seasonal cocktail menus—updated four times a year. Everything is made in-house: tinctures, syrups, salts and infusions. And yes, their Margarita is just as beautifully crafted as everything else they serve. Ask for the spicy version.

Brunch Margaritas at Hyde

Hyde is a year-round haven for margarita lovers, serving up a creative and colourful line-up that goes far beyond the classic. From moreish spicy margs to the tropical flair of the Coco Margz – crafted with coconut tequila – there’s something to suit every palate.

For those who dare, the Breakfast Margarita with a splash of orange marmalade offers a zesty start to any celebration. The menu also features frozen and strawberry margaritas, alongside the bold Flamin’ Fiesta, a fiery blend of mango and jalapeño that lives up to its name.

Non-drinkers are well catered for too, with non-alcoholic versions of both margaritas and palomas available.

The Universal

Since opening in 2016, The Universal has been serving locally sourced small plates, farmhouse cheeses, natural wines, and excellent cocktails. Among the standouts is their Margarita, made with Espolón 100% Agave Tequila, Luxardo Triple Sec, and fresh lime, or turn up the heat with their Spicy Margarita, which swaps in a house chilli and lime tequila for an extra kick.

Known for what might be the spiciest Margarita in Galway, it’s the perfect spot for a low-key catch-up in stylish, understated surroundings. Expect top-quality drinks, attentive service, and food that melts in your mouth.

Cadell

Tucked away in Woodquay where Caribou once stood, Cadell is a cosy spot for cocktails, catch-ups, and a friendly board game. Their margaritas are well worth seeking out, part of a wide-ranging drinks list that balances creativity with comfort.

The staff are friendly, the vibes are mellow, and the drinks are always spot-on.

Taquila

A relatively new addition to Galway’s food and drink scene, Taquila is already a firm favourite. Known for its authentic Mexican flavours (we cannot recommend their beef tacos enough), it’s also a standout spot for margarita enthusiasts. Alongside their Classic Margarita, they serve up an impressive selection including the tropical Mango Margarita, the punchy Spicy Margarita with ancho reyes, and the vibrant XXX Daisy—an irresistible mix of tequila añejo, passionfruit, pineapple, lime and prosecco.

For something floral, the Flor de Jamaica with hibiscus is another highlight. They’re kicking off the celebrations early this year with a Cinco de Mayo event on Sunday, 4th May, featuring great drink offers with the purchase of a main dish: Frozen Margaritas for just €10 all day, Coronas at €4.60, and a one-day-only special—Quesabirria, their cheesy, crispy beef tacos served with a rich consommé.

Mary Mullens

Mary Mullens is going all out for Cinco de Mayo this year with a courtyard celebration this bank holiday Sunday, 4th of May. Their Margaritas are the ideal start to a girls’ night, but it’s the sultry lighting and vibrant energy that make this one of the most atmospheric bars in the city centre.

On the night, expect a vibrant courtyard filled with Mexican-inspired street food, live music from Mariachi San Patricio, and a pop-up vintage shop with Public Romance. The bar’s modern yet nostalgic feel, complete with neon lights and Asian-inspired decor, makes it a unique setting for the occasion. You can book your tickets here.

Bierhaus

Tucked away on Henry Street since 2005, Bierhaus has long been a beloved part of Galway’s alternative scene. Known for its relaxed, inclusive atmosphere and friendly, knowledgeable staff, it draws a diverse crowd—from local artists and musicians to curious cocktail lovers.
