Ashford Castle’s Paula Stakelum (aka Paula Pastry) is upping her game with an ace activation with Lanson Champagne at the sporting event of the season, Wimbledon.

Forget Pimms, this Tipperary native, who is the Global Director of Chocolate & Pâtisserie for the entire Red Carnation Hotels group, has something far tastier in store for anyone visiting her pop-up at The Rubens at The Palace hotel, from 30th June to 13th July. 

We love a themed treat and this has to be one of the most delectable and 'grammable around. Think a perfect tennis court replica made from a light pistachio cake layered with zingy lemon curd and pistachio cream, topped with a genius pistachio-hued cocoa butter spray for the perfect textured finish. Comes complete with a glass of a glass of Champagne Lanson Le Rosé Création 67, for £36.
